Campfire Bagel Pizzas
Another favorite snack of ours is bagel pizzas. They are super quick and easy. For this one we use our Lodge Cast Iron again, but we use their Logic 5″ Wonder Skillet model.
Just cut a bagel in half, add mozzarella cheese, and pepperoni, heat until cheese melts, and the bagel is crusty. YUMMY!

Campfire Beefstew
I’m finally getting around to posting some cooking we’ve done over the campfire over the years. When we car camp it is very easy to bring along the things you need for meals like this. When we backpack in, our meals are not as great as this one was.
We are big fans of Lodge Cast Iron, and this beef stew requires the use of their dutch oven model.
First thing first - butter! Mmmmm, no calorie counting while camping.

Then you’re going to brown the meat. This time, we didn’t brown it enough for my taste.

Add in all the veggies. Potatoes, onions, celery, carrots. Season to taste with fresh thyme, salt and pepper.


Put the lid on and let simmer for about 2 hours, or until the onions and celery are clear.

Starting to look yummy only after about an hour.

We made enough for about 12 people, and their was only us two there, so it would have been nice to share it with other campers if we could have.

Jansport 8000 Meter Challenge - Training
Michael and his group that he is training with for the Jansport 8000 Meter Challenge went out for an evening hike after work for training. They are climbing the 5,080 foot peak trail tonight at Black Mountain. It’s very close and I can see it right out my front door. He just called from about half way up the trail and asked if I can see their lights. No honey, I can’t see your little headlamp from 2 miles away
He was huffing and puffing, but he said he was trekking on. He’s got a lot of work to do before the challenge right after Labor Day.

Sandals
I love my Teva’s and I never go camping without them. I have had them for over 10 years, and they have held up pretty good until recently. The sole is starting to split at the toe. I was online looking for some new ones and I found this site with all kinds of Teva, reef flip flops, and different sandals. The reef sandals will work nicely around the campfire at night also, especially when we camp on the beach again. Hmmm, maybe I should buy a couple different pairs ![]()

A few miles of backroads from bustling Yosemite we found a goldmine- a gold beach. We were the only people at Eastman lake and had the whole place to ourselves. The water has a gold shimmer to it because it is chock full of fool’s gold dust. Hands down the best campsite we had the whole trip.

Look what I found while surfing blogs today! TwitterPated, a blog all about birds. She has some pictures of the first Robins she saw for the Spring, and pictures of a Bald Eagle she saw not far from her house. How cool!
Cottonwood Cove Camping Trip
Okay, here are the pictures from the boys camping and fishing trip to Cottonwood Cove Resort & Marina. The wind speeds on Lake Mohave were so high that they were not able to rent a fishing boat. They had to fish from the shore, and they didn’t catch a thing. They had a good time regardless though.

It’s a great campsite. It’s small and only about 100m from the beach and has a a number of good bush walks. we saw dolphin close to shore when we were there.

JR Leaving to Cottonwood Cove Resort & Marina
Here a quick picture I snapped of JR as he was getting ready to leave the house for their camping trip to Cottonwood Cove Resort & Marina.

Saturday night he climbed a rock next to the campsite to get phone reception to call me. He said they were having a really great time. Michael called this morning with some sad news though. The wind speeds on the lake were up to 54 MPH gust, so they couldn’t take a boat out to go fishing. They were going to shoreline fish instead. They are due to come home tomorrow so I am excited to see them, and hear all the stories. I miss them!
